Description

For the Chicken Salad:
  • 2 cups cooked and shredded chicken
  • 1 ripe avocado, mashed
  • 2 tbsp Greek yogurt or mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Juice of 1/2 a lime
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped cilantro or parsley
  • Salt and pepper to taste
For the Wraps:
  • 8 large butter lettuce leaves or romaine lettuce leaves
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  • Mash the Avocado – In a mixing bowl, mash the ripe avocado until smooth.
  • Mix the Chicken Salad – Add shredded chicken, Greek yogurt or mayo, Dijon mustard, lime juice, garlic powder, onion powder, red onion, celery, and cilantro. Stir well to combine. Season with salt and pepper to taste.
  • Prepare the Lettuce Wraps – Wash and pat dry the lettuce leaves.
  • Assemble the Wraps – Spoon the chicken salad into each lettuce leaf. Top with cherry tomatoes, shredded carrots, and feta cheese if using.
