Wet Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • 2 tablespoons maple syrup or honey

  • 1 teaspoon vanilla extract

Instructions

  • Preheat Oven
    Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish with non-stick spray or butter.

  • Mix Dry Ingredients
    In a small bowl, stir together oats, flour, baking powder, cinnamon (if using), and salt.

  • Combine Wet Ingredients
    In a larger bowl, whisk together the cottage cheese, eggs, maple syrup, and vanilla until smooth.

  • Mix Everything Together

Notes

You can substitute the blueberries with raspberries, diced apples, or chopped peaches. Draining cottage cheese slightly helps avoid excess moisture. For a citrus twist, add lemon zest. This bake can be frozen for up to 2 months.
