Instructions

Preheat Oven
Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish with non-stick spray or butter. -
Mix Dry Ingredients
In a small bowl, stir together oats, flour, baking powder, cinnamon (if using), and salt. -
Combine Wet Ingredients
In a larger bowl, whisk together the cottage cheese, eggs, maple syrup, and vanilla until smooth. -
Mix Everything Together
Add the dry mixture to the wet mixture and stir gently until just combined. -
Add Blueberries
Fold in the blueberries, being careful not to overmix. -
Bake
Pour the batter into the greased baking dish and smooth the top. Bake for 35–40 minutes until golden and set. -
Cool & Serve
Allow to cool for 10 minutes. Slice and enjoy warm, at room temperature, or chilled.
Notes
You can substitute the blueberries with raspberries, diced apples, or chopped peaches. Draining cottage cheese slightly helps avoid excess moisture. For a citrus twist, add lemon zest. This bake can be frozen for up to 2 months.
