Brookies are a delightful fusion of rich, fudgy brownies and chewy chocolate chip cookies, offering the best of both worlds in a single, indulgent treat. This recipe combines two classic desserts into one irresistible bar that’s perfect for any occasion.

Ingredients

Scale

For the Brownie Layer:

  • ¾ cup (170g) unsalted butter, melted
  • 1½ cups (300g) granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder

For the Cookie Layer:

  • ¾ cup (170g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1¼ cups (160g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking pan with parchment paper or lightly grease it.

  2. Prepare the Brownie Batter:

    • In a large bowl, whisk together the melted butter and granulated sugar until well combined.
    • Add the eggs and vanilla extract, whisking until smooth.
    • Sift in the flour, cocoa powder, salt, and baking powder. Stir until just combined; avoid overmixing.
    • Pour the brownie batter into the prepared baking pan, spreading it evenly.
  3. Prepare the Cookie Dough:

    • In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well incorporated.
    • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until combined.
    • Fold in the semi-sweet chocolate chips.
  4. Assemble the Brookies:

    • Drop spoonfuls of the cookie dough over the brownie batter in the pan. Gently spread and press the dough to create an even layer over the brownie batter.
  5. Bake:

    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. The top should be golden brown, and the edges set.
  6. Cool and Serve:

    • Allow the brookies to cool completely in the pan on a wire rack. Once cooled, cut into squares and serve;

Notes

Storage: Store brookies in an airtight container at room temperature for up to four days.

Variations: Feel free to add nuts, such as chopped walnuts or pecans, to the brownie or cookie layer for added texture and flavor.

Serving Suggestion: For an extra indulgent treat, warm a brookie in the microwave for a few seconds and top with a scoop of vanilla ice cream.
