Ingredients
For the Corn
-
4 ears of fresh corn on the cob, husked and cleaned
Garlic Butter
-
4 tablespoons unsalted butter, melted
-
3 cloves garlic, minced
-
1 tablespoon chopped fresh parsley (optional)
-
Salt and pepper to taste
Cheese Topping
-
1 cup shredded Parmesan or mozzarella cheese (or a mix)
-
¼ teaspoon smoked paprika (optional, for garnish)
Instructions
-
Cook the Corn
Boil the corn in a large pot of salted water for 10–12 minutes, or grill over medium heat for about 10 minutes, turning occasionally until tender. -
Make the Garlic Butter
In a small saucepan, melt the butter over low heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Stir in parsley, salt, and pepper. -
Butter the Corn
Using a basting brush, generously coat each hot corn cob with the garlic butter mixture. -
Add the Cheese
Sprinkle shredded cheese over the buttered corn. For extra melty cheese, place the corn under a broiler for 2–3 minutes until bubbly and golden. -
Garnish and Serve
Sprinkle with smoked paprika or additional parsley and serve immediately.
Notes
To make this dish ahead, prepare the garlic butter and parboil the corn. Reheat under the broiler with cheese before serving. Try different cheeses like cotija, feta, or sharp cheddar for fun variations. For a Mexican twist, add lime juice and a sprinkle of chili powder.
