Description

These Chicken Fajita Burgers combine bold Tex-Mex flavors with juicy grilled chicken, sautéed peppers, and creamy toppings, all tucked into a toasted bun. A perfect blend of spice, crunch, and comfort, ideal for weeknights or weekend grilling.

For the Chicken Patties

  • 1 lb ground chicken

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

For the Fajita Veggies

  • 1 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • Pinch of salt and pepper

For Assembly

  • 4 brioche buns, toasted

  • Sliced pepper jack or cheddar cheese

  • Sliced avocado or guacamole

  • Fresh cilantro

  • Lime wedges

  • Jalapeños (optional)


Instructions

  • Mix and Form the Patties
    In a large mixing bowl, combine ground chicken with olive oil and all spices. Gently mix and shape into 4 even patties.

  • Grill the Patties
    Preheat a grill or grill pan to medium-high. Cook patties for 6–7 minutes per side until internal temp reaches 165°F. Add cheese slices in the last minute to melt.

  • Sauté the Fajita Veggies
    In a skillet over medium heat, heat olive oil and add sliced bell peppers and onion. Season with salt and pepper, sauté for 6–8 minutes until soft and lightly charred.

  • Toast the Buns
    Lightly toast the brioche buns on the grill or in a pan until golden.

  • Assemble the Burgers
    Place chicken patties on bottom buns, top with fajita veggies, avocado or guacamole, cilantro, and jalapeños if using. Finish with a squeeze of lime and top buns.

Notes

You can prepare the patties and fajita veggies in advance and store in the fridge for up to 24 hours. Swap in turkey for a leaner variation or add chipotle mayo for a smoky kick. Toasting the buns helps prevent sogginess and enhances the flavor.
