Ingredients

Instructions

Prep the pan
Grease a large baking sheet with butter or non-stick spray, or line it with parchment paper for easy cleanup. -
Combine ingredients
In a heavy saucepan, combine sugar, water, and corn syrup. Stir over medium heat until sugar dissolves. -
Boil the mixture
Attach a candy thermometer. Bring the mixture to a boil without stirring, and cook until it reaches 300°F (hard crack stage), about 25–30 minutes. -
Add flavor and color
Remove from heat. Carefully stir in cinnamon oil and red food coloring. Be cautious—vapors can be strong. -
Pour and cool
Immediately pour onto the prepared sheet. Spread evenly and let cool for at least 1 hour until fully hardened. -
Break and dust
Break into pieces using a mallet or back of a spoon. Dust with powdered sugar to prevent sticking.

Cinnamon oil is more potent than extract—use with caution and avoid inhaling vapors during mixing. For a milder version, stick with cinnamon extract. Store candy in a cool, dry place to avoid stickiness. Always use a thermometer to ensure the right texture.
