  • ¾ cup light corn syrup

  • Butter or non-stick spray, for greasing the pan


Instructions

  • Prep the pan
    Grease a large baking sheet with butter or non-stick spray, or line it with parchment paper for easy cleanup.

  • Combine ingredients
    In a heavy saucepan, combine sugar, water, and corn syrup. Stir over medium heat until sugar dissolves.

  • Boil the mixture
    Attach a candy thermometer. Bring the mixture to a boil without stirring, and cook until it reaches 300°F (hard crack stage), about 25–30 minutes.

  • Add flavor and color
    Remove from heat. Carefully stir in cinnamon oil and red food coloring. Be cautious—vapors can be strong.

  • Pour and cool
    Immediately pour onto the prepared sheet. Spread evenly and let cool for at least 1 hour until fully hardened.

  • Break and dust
    Break into pieces using a mallet or back of a spoon. Dust with powdered sugar to prevent sticking.
