Ingredients

Scale

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Vegetable oil, for frying

For the Sweet Chili Mayo:

  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tsp lime juice
  • 1/2 tsp honey
  • 1/2 tsp sriracha (optional, for spice)

Instructions

  • Prepare the Coating: In three shallow bowls, place flour mixed with salt and pepper, beaten eggs, and a mixture of shredded coconut, panko, garlic powder, and paprika.
  • Coat the Shrimp: Dredge each shrimp in the flour, then dip into the eggs, and finally coat with the coconut-panko mixture, pressing gently to adhere.
  • Heat the Oil: In a deep pan, heat about 1 inch of vegetable oil to 350°F (175°C).
  • Fry the Shrimp: Fry the shrimp in batches for 2-3 minutes per side until golden brown. Remove and drain on a paper towel-lined plate.
  • Make the Sweet Chili Mayo: Mix all the sauce ingredients in a bowl until smooth.
  • Serve and Enjoy: Serve the shrimp hot with a side of sweet chili mayo for dipping.

Notes

Frying at the correct oil temperature prevents greasy shrimp. For a healthier version, bake at 400°F for 15-18 minutes or air fry at 375°F for 10 minutes, flipping halfway through. Use fresh shrimp for the best texture.
