Description

This Cream Cheese Corn Casserole is rich, creamy, and irresistibly cheesy. Made with corn, cream cheese, sour cream, and a touch of sweetness from muffin mix, it’s the perfect comfort food side for any occasion—holidays, potlucks, or cozy family dinners.

For the Casserole

  • 2 cans (15 oz each) whole kernel corn, drained

  • 1 can (15 oz) creamed corn

  • 8 oz cream cheese, softened and cubed

  • ½ cup (1 stick) unsalted butter, melted

  • 2 large eggs

  • 1 cup sour cream

  • ½ cup shredded cheddar cheese

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon garlic powder (optional)

  • 1 box (8.5 oz) corn muffin mix

Optional Toppings

  • Extra shredded cheddar cheese

  • Chopped fresh chives or parsley

  • Crushed buttery crackers or breadcrumbs


Instructions

  • Preheat Oven
    Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.

  • Mix Wet Ingredients
    In a large bowl, whisk together eggs, melted butter, and sour cream until smooth. Stir in the cream cheese until mostly incorporated.

  • Add Corn and Seasonings
    Mix in the whole kernel corn, creamed corn, salt, pepper, and optional garlic powder.

  • Fold in Muffin Mix and Cheese
    Gently fold in the corn muffin mix and shredded cheddar. Do not overmix.

  • Transfer and Bake
    Pour the mixture into the greased baking dish. Bake for 45–50 minutes or until golden brown and set in the center.

  • Optional Toppings and Serve
    Sprinkle extra cheese or fresh herbs on top, let it sit for 5–10 minutes, then serve warm.

Notes

To make it ahead, prep and store the unbaked casserole in the fridge for up to 24 hours. Bake just before serving. Leftovers reheat beautifully in the microwave or oven. You can also add diced jalapeños or crumbled bacon for extra flavor.
