Description

A no-bake dream dessert layered with creamy peanut butter filling, whipped topping, and Nutter Butter cookies—this Creamy Nutter Butter Icebox Cake is rich, indulgent, and perfect for peanut butter lovers. Easy to assemble and even easier to love!

Ingredients

Scale

Filling

  • 1 (8 oz) package cream cheese, softened

  • 1 cup creamy peanut butter

  • 3/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed

Layers

  • 1 package Nutter Butter cookies

  • 1/2 cup milk (for dipping cookies)

Topping

  • Crushed Nutter Butters (optional)

  • Drizzle of melted peanut butter or chocolate (optional)

Instructions

  • Make the Filling
In a large bowl, beat the softened cream cheese and peanut butter together until smooth. Add powdered sugar and vanilla extract, and mix well. Gently fold in the whipped topping until fully combined. Set aside.

  • Dip the Cookies
Pour milk into a shallow bowl. Lightly dip each Nutter Butter cookie in the milk for 1–2 seconds per side to soften slightly.

  • Assemble the Layers
In a 9×13-inch dish, place a layer of dipped cookies on the bottom. Spread a layer of the peanut butter filling over the cookies. Repeat layers until you finish the filling, ending with a layer of the cream mixture on top.

  • Chill
Cover and refrigerate the cake for at least 4 hours or overnight for best results.

  • Garnish and Serve
Just before serving, top with crushed Nutter Butters and a drizzle of peanut butter or chocolate, if desired.

Notes

You can make homemade whipped cream by whipping 1 cup of heavy cream with 2 tablespoons powdered sugar until stiff peaks form. For a crunchier texture, reserve a few cookies to crumble over the top just before serving.
