These Easter Blossom Cookies are a festive and delicious treat, perfect for spring celebrations. Soft, buttery cookies rolled in pastel sugar and topped with a chocolate kiss make them an irresistible Easter favorite.
Ingredients
For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
For Rolling:
- 1/2 cup pastel-colored sanding sugar (pink, yellow, blue, etc.)
For Topping:
- 24 milk chocolate kisses, unwrapped

Preheat the Oven
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. -
Make the Dough
In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, mixing until well combined. -
Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. -
Roll in Sugar
Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball with pastel-colored sanding sugar. -
Bake the Cookies
Arrange the dough balls on the prepared baking sheets, spacing them 2 inches apart. Bake for 8-10 minutes until the edges are set and lightly golden. -
Add the Chocolate Kiss
Remove from the oven and immediately press a chocolate kiss into the center of each cookie. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Chilling the dough for 30 minutes before baking helps prevent excessive spreading.
If you want a softer cookie, slightly underbake them and let them finish cooking on the baking sheet.
Store in an airtight container at room temperature for up to a week.
