Description

These Easter Blossom Cookies are a festive and delicious treat, perfect for spring celebrations. Soft, buttery cookies rolled in pastel sugar and topped with a chocolate kiss make them an irresistible Easter favorite.

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For Rolling:

  • 1/2 cup pastel-colored sanding sugar (pink, yellow, blue, etc.)

For Topping:

  • 24 milk chocolate kisses, unwrapped

Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

  • Make the Dough
    In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, mixing until well combined.

  • Mix the Dry Ingredients
    In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

  • Roll in Sugar
    Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball with pastel-colored sanding sugar.

  • Bake the Cookies
    Arrange the dough balls on the prepared baking sheets, spacing them 2 inches apart. Bake for 8-10 minutes until the edges are set and lightly golden.

  • Add the Chocolate Kiss
    Remove from the oven and immediately press a chocolate kiss into the center of each cookie. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chilling the dough for 30 minutes before baking helps prevent excessive spreading.

If you want a softer cookie, slightly underbake them and let them finish cooking on the baking sheet.

Store in an airtight container at room temperature for up to a week.
