Ingredients

Scale

Dry Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Flavor & Color

  • 3 oz box Jello (various flavors like strawberry, lemon, lime, and berry)
  • Food coloring (optional, for more vibrant colors)

Instructions

  • Prepare the Dough – In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy. Add the egg and vanilla, mixing well.
  • Divide and Flavor – Separate the dough into portions. Mix in a few tablespoons of Jello powder into each portion. Add food coloring if desired.
  • Shape the Cookies – Roll dough into small balls and coat lightly with additional Jello powder. Place on a parchment-lined baking sheet.
  • Bake to Perfection – Bake at 350°F (175°C) for 8-10 minutes until the edges are set. Cool on the baking sheet before transferring to a wire rack.
  • Enjoy! – Serve and enjoy your colorful, fruity Easter cookies!

Notes

Chilling the dough for 15 minutes helps make thicker cookies.

Rolling the cookies in sugar before baking gives a sparkly finish.

You can mix different Jello flavors for unique color combinations.
