Instructions

Preheat the oven
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. -
Separate the eggs
Crack the eggs and separate the whites from the yolks into two different bowls. -
Beat the egg whites
Add the cream of tartar to the egg whites and beat with a mixer until stiff peaks form. -
Blend the yolk mixture
Mix the cottage cheese with egg yolks and salt until smooth. Press through a sieve for a smoother texture if desired. -
Fold egg whites into yolk mixture
Gently fold the whipped egg whites into the cottage cheese mixture, preserving as much air as possible. -
Shape and bake
Spoon the mixture onto the baking sheet in round mounds and bake for 25 minutes or until golden. -
Cool before serving
Let them cool for 10 minutes before removing from the sheet.
Notes
Letting the bread cool helps it firm up and prevents it from deflating. You can add herbs, garlic powder, or sweet seasonings like cinnamon for variety. For smoother bread, press cottage cheese through a sieve before mixing.
