Garlic Butter Mixture

Prep the Potatoes
Preheat your oven to 400°F (200°C). Wash and scrub the baby potatoes, then cut them into halves or quarters depending on size. -
Make the Garlic Butter
In a small saucepan or microwave-safe bowl, melt the butter. Stir in olive oil, minced garlic, salt, and pepper. -
Toss Potatoes
In a large bowl, combine the potatoes with the garlic butter mixture. Toss until all pieces are evenly coated. -
Arrange on Baking Sheet
Line a baking sheet with parchment paper or foil. Spread the potatoes in a single layer, cut side down for crispiness. -
Roast
Bake for 35–40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside. -
Garnish and Serve
Remove from the oven and sprinkle with fresh parsley before serving.
Notes
For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting, then dry thoroughly. Add a sprinkle of parmesan in the last 10 minutes for a cheesy twist.
