Description

Creamy, garlicky, and packed with flavor, this Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce is a one-pan wonder perfect for a quick and elegant dinner. Tender salmon fillets are seared to perfection and smothered in a rich sauce with earthy mushrooms and vibrant spinach.

For the Salmon

  • 4 salmon fillets, skin on

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 2 tablespoons unsalted butter

For the Sauce

  • 1 tablespoon olive oil

  • 4 cloves garlic, minced

  • 1 cup mushrooms, sliced

  • 2 cups baby spinach

  • 1 teaspoon Italian seasoning

  • ½ teaspoon crushed red pepper flakes (optional)

  • ¾ cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Season the Salmon
    Pat the salmon fillets dry with a paper towel and season with salt and pepper on both sides.

  • Sear the Salmon
    Heat olive oil and butter in a large skillet over medium-high heat. Place salmon fillets skin-side down and cook for 4–5 minutes per side, or until golden and cooked through. Remove from skillet and set aside.

  • Sauté Garlic and Mushrooms
    In the same skillet, add olive oil if needed. Add garlic and sauté for 30 seconds until fragrant. Stir in mushrooms and cook for 4–5 minutes until browned and tender.

  • Add Spinach
    Stir in spinach and cook for about 2 minutes until wilted.

  • Create the Creamy Sauce
    Add Italian seasoning, red pepper flakes, heavy cream, chicken broth, and Parmesan cheese. Stir and simmer for 3–5 minutes until the sauce thickens slightly.

  • Return Salmon to Skillet
    Place salmon back into the pan, spoon sauce over the top, and let it simmer for another 1–2 minutes.

  • Garnish and Serve
    Sprinkle with chopped parsley and serve hot with your favorite sides.

Notes

For an extra flavor boost, add a splash of white wine to deglaze the pan before adding cream. You can also swap out heavy cream for half-and-half if you prefer a lighter sauce.
