This creamy and cheesy casserole is a favorite at breakfast gatherings, potlucks, and holiday meals, offering a hearty side that’s both indulgent and easy to prepare.

Ingredients

Scale
  • 2 pounds frozen hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 (8-ounce) container sour cream
  • 1/2 cup chopped onion
  • 1/2 cup (1 stick) butter, melted
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup crushed cornflakes (optional, for topping)
  • 2 tablespoons butter, melted (if using cornflake topping)

Instructions

  1. Preheat the Oven
Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  2. Combine Main Ingredients
In a large bowl, mix together the thawed hash brown potatoes, shredded Cheddar cheese, condensed cream of chicken soup, sour cream, chopped onion, 1/2 cup melted butter, salt, and ground black pepper until well combined.

  3. Transfer to Baking Dish
Spread the potato mixture evenly into the prepared baking dish.

  4. Add Topping (Optional)
If using the cornflake topping, combine the crushed cornflakes with 2 tablespoons of melted butter in a small bowl. Sprinkle this mixture evenly over the casserole.

  5. Bake the Casserole
Bake in the preheated oven for 45 to 50 minutes, or until the casserole is bubbly and the top is golden brown.

  6. Cool and Serve
Allow the casserole to cool for about 10 minutes before serving.
