Ingredients
For the Bites

Instructions

Make the Custard
In a mixing bowl, whisk together the eggs, milk, vanilla, cinnamon, and a pinch of salt until well combined. -
Soak the Bread
Add the bread cubes to the bowl and gently toss to coat. Let them soak briefly—just enough to absorb the custard without becoming mushy. -
Mix the Cinnamon Sugar
In a shallow bowl, combine the granulated sugar and cinnamon. Set aside for coating the bites once cooked. -
Cook the Bites
Heat butter in a skillet over medium heat. Add the soaked bread cubes in a single layer and cook for 2–3 minutes per side until golden brown on all sides. -
Toss in Cinnamon Sugar
Transfer the hot French toast bites directly into the cinnamon sugar mixture and toss to coat evenly while still warm. -

Notes
Using day-old brioche or challah improves texture and helps absorb the custard without getting soggy. For a quicker clean-up, line the sugar-coating bowl with parchment paper. These bites freeze well and reheat perfectly in an air fryer.
