Instructions

Preheat and Prepare
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners. -
Make the Dough
In a saucepan, combine butter, milk, sugar, and salt. Heat over medium until boiling and butter is melted. -
Add Flour
Remove from heat and stir in flour all at once. Return to heat and stir constantly for 1–2 minutes until a dough forms and pulls away from the pan. -
Cool Dough Slightly
Transfer dough to a bowl and let cool for about 5 minutes to avoid scrambling the eggs. -
Add Eggs One at a Time
Beat in eggs individually, mixing thoroughly after each. The dough will look separated at first but will come together smoothly. -
Fill and Sprinkle
Spoon batter into muffin cups, filling each about two-thirds. Sprinkle with sugar for a crisp top. -
Bake to Perfection
Bake for 30–35 minutes until puffed and golden brown. Don’t open the oven early. Let cool slightly before serving.
Notes
Avoid opening the oven while baking or the puffs may collapse. These are best enjoyed fresh but can be stored or frozen and reheated. Add a touch of vanilla or lemon zest for flavor variations.
