Ingredients
For the Chicken and Marinade:
- 2 boneless, skinless chicken breasts, diced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1/2 teaspoon black pepper
For the Rice:
- 1 cup jasmine rice
- 2 cups chicken broth
- 1/2 cup pineapple juice
- 1 tablespoon soy sauce
For the Stir-Fry:
- 1 tablespoon vegetable oil
- 1/2 onion, chopped
- 1 red bell pepper, diced
- 1 cup pineapple chunks
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped (for garnish)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
1. Marinate the Chicken – In a bowl, mix soy sauce, honey, olive oil, garlic powder, ginger powder, and black pepper. Add the diced chicken, toss to coat, and marinate for at least 15 minutes.
2. Cook the Rice – In a medium pot, bring chicken broth, pineapple juice, and soy sauce to a boil. Add the jasmine rice, cover, and cook on low for 15 minutes. Fluff with a fork and set aside.
3. Sauté the Veggies – Heat vegetable oil in a large skillet or wok over medium heat. Add chopped onion and bell pepper, cooking for 3-4 minutes until softened.
4. Cook the Chicken – Push the veggies to the side and add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
5. Add Pineapple & Seasonings – Stir in garlic, ginger, pineapple chunks, and red pepper flakes (if using). Cook for 2-3 minutes to blend flavors.
6. Combine Everything – Add the cooked rice to the skillet and toss everything together. Let it cook for another 2 minutes, stirring occasionally.
7. Garnish & Serve – Sprinkle with chopped green onions and serve hot. Enjoy!
Notes
Fresh pineapple works best for a naturally sweet flavor, but canned pineapple in juice is a great alternative. For extra heat, add sriracha or crushed red pepper flakes. This dish also pairs well with a side of steamed broccoli.
