Ingredients:

  • 3 large overripe bananas (approx. 375g mashed)
  • 2 cups self-rising flour (250g)
  • 1/2 cup plain Greek yogurt (120g)
  • 1/2 cup chopped walnuts (60g)
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 180°C. Line a 20cm loaf pan with parchment paper for easy removal.
  2. In a large mixing bowl, mash the overripe bananas using a potato masher or fork until they reach a liquid consistency with only very small lumps remaining.
  3. Stir the Greek yogurt into the mashed bananas until the mixture is fully incorporated and smooth.
  4. Gently fold in the self-rising flour, chopped walnuts, and ground cinnamon. Mix only until no white streaks of flour remain to ensure a tender crumb.
  5. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
