Ingredients:
- 3 large overripe bananas (approx. 375g mashed)
- 2 cups self-rising flour (250g)
- 1/2 cup plain Greek yogurt (120g)
- 1/2 cup chopped walnuts (60g)
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 180°C. Line a 20cm loaf pan with parchment paper for easy removal.
- In a large mixing bowl, mash the overripe bananas using a potato masher or fork until they reach a liquid consistency with only very small lumps remaining.
- Stir the Greek yogurt into the mashed bananas until the mixture is fully incorporated and smooth.
- Gently fold in the self-rising flour, chopped walnuts, and ground cinnamon. Mix only until no white streaks of flour remain to ensure a tender crumb.
- Transfer the batter to the prepared loaf pan and smooth the top. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
