Ingredients:
- 1.5 lb pork tenderloin
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
Instructions:
- Dry the meat. Pat the pork tenderloin completely dry with paper towels. Note: Moisture on the surface creates steam, which prevents that shatter crisp crust.
- Apply oil. Rub the olive oil evenly over the entire surface of the meat.
- Season heavily. Combine brown sugar, smoked paprika, garlic powder, kosher salt, black pepper, and dried oregano. Coat the meat generously, pressing the spices into the flesh with your hands.
- Load the basket. Place the seasoned pork in the air fryer basket. Make sure it isn't touching the sides too much for better airflow.
- First cook cycle. Set the temperature to 400°F (205°C). Cook for 10 minutes until the edges start to smell caramelized and look dark.
- Flip the meat. Using tongs, carefully flip the tenderloin to ensure even browning.
- Final cook cycle. Cook for another 8–12 minutes. Start checking the temp at 8 minutes. Remove the pork when the digital meat thermometer reads 140°F (60°C) at the thickest part.
- Rest the meat. Transfer the pork to a plate immediately. Tent loosely with foil and let it rest for 10 minutes. Note: The internal temperature will rise to 145°F (63°C) during this time.
