Ingredients:

  • 1.5 lb pork tenderloin
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Instructions:

  1. Dry the meat. Pat the pork tenderloin completely dry with paper towels. Note: Moisture on the surface creates steam, which prevents that shatter crisp crust.
  2. Apply oil. Rub the olive oil evenly over the entire surface of the meat.
  3. Season heavily. Combine brown sugar, smoked paprika, garlic powder, kosher salt, black pepper, and dried oregano. Coat the meat generously, pressing the spices into the flesh with your hands.
  4. Load the basket. Place the seasoned pork in the air fryer basket. Make sure it isn't touching the sides too much for better airflow.
  5. First cook cycle. Set the temperature to 400°F (205°C). Cook for 10 minutes until the edges start to smell caramelized and look dark.
  6. Flip the meat. Using tongs, carefully flip the tenderloin to ensure even browning.
  7. Final cook cycle. Cook for another 8–12 minutes. Start checking the temp at 8 minutes. Remove the pork when the digital meat thermometer reads 140°F (60°C) at the thickest part.
  8. Rest the meat. Transfer the pork to a plate immediately. Tent loosely with foil and let it rest for 10 minutes. Note: The internal temperature will rise to 145°F (63°C) during this time.
