Ingredients:

  • 1 cup (125g) All-purpose flour
  • 1 tsp (5g) Baking powder
  • 1 tbsp (6g) Pumpkin pie spice
  • 1/2 cup (120g) Pumpkin puree
  • 1/4 cup (50g) Brown sugar, packed
  • 1 large (50g) Egg
  • 2 tbsp (30ml) Melted unsalted butter
  • 2 tbsp (28g) Melted unsalted butter
  • 1/4 cup (50g) Granulated sugar
  • 1 tsp (2g) Ground cinnamon

Instructions:

  1. Combine the flour, baking powder, and pumpkin pie spice in a medium bowl until no clumps remain.
  2. In a larger bowl, beat the pumpkin puree, brown sugar, egg, and melted butter until velvety.
  3. Fold the dry ingredients into the wet base with a spatula. Stop the moment no flour streaks remain, as overmixing makes the donuts tough.
  4. Preheat your air fryer to 350°F (175°C) and lightly grease the basket with spray or a bit of oil.
  5. Drop rounded tablespoons of batter into the basket. Leave at least 1/2 inch of space between each hole so the air can move.
  6. Cook for 6–8 minutes until the tops are set and the edges are mahogany colored.
  7. While the donuts cook, whisk the cinnamon and sugar in a shallow bowl and melt 2 tbsp of butter in a separate dish.
  8. As soon as the donuts emerge, dip each one quickly into the melted butter.
  9. Roll them in the cinnamon sugar mixture until fully coated.
  10. Let them sit for 2 minutes before eating.
