Ingredients:
- 1 cup (125g) All-purpose flour
- 1 tsp (5g) Baking powder
- 1 tbsp (6g) Pumpkin pie spice
- 1/2 cup (120g) Pumpkin puree
- 1/4 cup (50g) Brown sugar, packed
- 1 large (50g) Egg
- 2 tbsp (30ml) Melted unsalted butter
- 2 tbsp (28g) Melted unsalted butter
- 1/4 cup (50g) Granulated sugar
- 1 tsp (2g) Ground cinnamon
Instructions:
- Combine the flour, baking powder, and pumpkin pie spice in a medium bowl until no clumps remain.
- In a larger bowl, beat the pumpkin puree, brown sugar, egg, and melted butter until velvety.
- Fold the dry ingredients into the wet base with a spatula. Stop the moment no flour streaks remain, as overmixing makes the donuts tough.
- Preheat your air fryer to 350°F (175°C) and lightly grease the basket with spray or a bit of oil.
- Drop rounded tablespoons of batter into the basket. Leave at least 1/2 inch of space between each hole so the air can move.
- Cook for 6–8 minutes until the tops are set and the edges are mahogany colored.
- While the donuts cook, whisk the cinnamon and sugar in a shallow bowl and melt 2 tbsp of butter in a separate dish.
- As soon as the donuts emerge, dip each one quickly into the melted butter.
- Roll them in the cinnamon sugar mixture until fully coated.
- Let them sit for 2 minutes before eating.
