Instructions:

  1. Slice sweet potatoes into uniform 1/4-inch thick matchsticks. Pat them thoroughly dry with paper towels to remove surface moisture.
  2. Place dry fries in a large mixing bowl. Dust with cornstarch and toss until every fry is lightly and evenly coated.
  3. Drizzle with avocado oil and sprinkle with smoked paprika, garlic powder, salt, and black pepper. Toss until the fries are a vibrant mahogany color.
  4. Preheat air fryer to 400°F (200°C).
  5. Arrange fries in the air fryer basket in a single layer, ensuring they are not crowded to allow for 360-degree airflow.
  6. Air fry for 8 minutes, then remove the basket and give it a vigorous shake.
  7. Continue cooking for another 5 to 7 minutes until the edges are dark brown and the fries feel stiff.
