Instructions:
- Slice sweet potatoes into uniform 1/4-inch thick matchsticks. Pat them thoroughly dry with paper towels to remove surface moisture.
- Place dry fries in a large mixing bowl. Dust with cornstarch and toss until every fry is lightly and evenly coated.
- Drizzle with avocado oil and sprinkle with smoked paprika, garlic powder, salt, and black pepper. Toss until the fries are a vibrant mahogany color.
- Preheat air fryer to 400°F (200°C).
- Arrange fries in the air fryer basket in a single layer, ensuring they are not crowded to allow for 360-degree airflow.
- Air fry for 8 minutes, then remove the basket and give it a vigorous shake.
- Continue cooking for another 5 to 7 minutes until the edges are dark brown and the fries feel stiff.
