Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g)
- 1 tsp (6g) Kosher salt
- 1/2 cup (65g) All-purpose flour
- 2 large eggs, beaten
- 1 cup (60g) Panko breadcrumbs
- 1/2 cup (50g) Grated Parmesan cheese
- 1 tsp (2g) Garlic powder
- 1 tsp (2g) Smoked paprika
- 1/2 tsp (1g) Black pepper
- 2 tbsp (30ml) Olive oil spray
Instructions:
- Cut zucchini into spears approximately 3 inches long and 1/2 inch thick.
- Toss zucchini spears with 1 tsp (6g) of salt in a bowl and let sit for 15 minutes to draw out moisture.
- Thoroughly pat every zucchini spear dry with paper towels to remove surface beads of water.
- Dredge spears in all purpose flour, shaking off any excess to create a primer layer.
- Dip the floured spears into the beaten eggs until fully coated.
- Press spears firmly into a mixture of Panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and black pepper.
- Arrange spears in the air fryer basket in a single layer, ensuring they are not overcrowded.
- Lightly spray the tops of the fries with olive oil spray.
- Air fry at 400°F (200°C) for 10–12 minutes.
