Ingredients:
- 2 1/2 cups all-purpose flour (310g)
- 1 1/2 cups granulated sugar (300g)

- 2 tsp ground cinnamon (5g)
- 1/2 tsp ground nutmeg (1g)
- 1/2 tsp salt (3g)
- 3/4 cup unsalted butter, softened (170g)
- 2 large eggs (100g)
- 1 tsp vanilla extract (5ml)
- 3 cups Honeycrisp or Granny Smith apples, peeled and diced (450g)
- 8 oz cream cheese, softened (225g)
- 1/4 cup unsalted butter, softened (55g)
- 3 cups powdered sugar (360g)
- 1 tsp vanilla extract (5ml)
- 1 tbsp heavy cream (15ml)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch pan and line the bottom with parchment paper. Dice apples into uniform 1/4-inch cubes.
- In a large bowl, cream the softened butter and sugar until pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- In a separate small bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt; gradually fold this into the butter mixture until just combined.
- Gently fold in the diced apples using a spatula. Spread the mixture into the prepared pan and bake for 40–45 minutes until a toothpick comes out clean.
- Allow the cake to cool completely. Whip together cream cheese and butter until smooth, then gradually add powdered sugar, vanilla, and cream. Spread frosting over the cake before slicing.
