Ingredients:
- 1 cup (245g) pumpkin puree
- ½ cup (100g) brown sugar
- ¼ cup (55g) coconut oil, melted
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 2 tsp (6g) pumpkin pie spice
- ¼ tsp (1.5g) salt
- 2 tbsp (28g) melted butter
- ¼ cup (50g) cinnamon sugar mix
Instructions:
- Whisk the melted coconut oil and brown sugar together until smooth.
- Beat in the egg, pumpkin puree, and vanilla extract until the mixture is a uniform, deep orange color.
- Gently fold in the flour, baking powder, pumpkin spice, and salt. Stir only until the white streaks of flour disappear to avoid a tough texture.
- Transfer batter to a piping bag or plastic bag with a snipped corner. Pipe into each donut cavity, filling about ¾ of the way full, and smooth the tops.
- Bake at 350°F (175°C) for 10–12 minutes until the tops spring back slightly and edges are pale golden-brown.
- Cool in the pan for 5 minutes before transferring to a wire rack.
- While warm, dip the top of each donut into melted butter, then immediately press into the cinnamon sugar mix.
