Ingredients:
- 2 lbs chicken wings
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup bourbon whiskey
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
Instructions:
- Pat the chicken wings completely dry with paper towels. In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated. Arrange them in a single layer on a wire rack set over a baking sheet.
- Preheat the oven to 425°F (220°C). Bake the wings for 35–40 minutes until the skin is golden brown and sizzling.
- While wings roast, combine bourbon, brown sugar, soy sauce, vinegar, honey, garlic powder, and cayenne in a saucepan. Bring to a boil over medium-high heat, then reduce to a simmer for 8–10 minutes until the sauce is reduced by half and thickened into a syrup.
- Remove wings from the oven and toss them in a clean bowl with the reduced glaze until fully coated. Return the wings to the oven for an additional 3–5 minutes until the glaze bubbles and creates a sticky finish.
