Ingredients:

  • 2 lbs chicken wings
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup bourbon whiskey
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat the chicken wings completely dry with paper towels. In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated. Arrange them in a single layer on a wire rack set over a baking sheet.
  2. Preheat the oven to 425°F (220°C). Bake the wings for 35–40 minutes until the skin is golden brown and sizzling.
  3. While wings roast, combine bourbon, brown sugar, soy sauce, vinegar, honey, garlic powder, and cayenne in a saucepan. Bring to a boil over medium-high heat, then reduce to a simmer for 8–10 minutes until the sauce is reduced by half and thickened into a syrup.
  4. Remove wings from the oven and toss them in a clean bowl with the reduced glaze until fully coated. Return the wings to the oven for an additional 3–5 minutes until the glaze bubbles and creates a sticky finish.
