Ingredients:

  • 1 lb lean ground beef
  • 1/4 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup bourbon
  • 1/3 cup light brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika

Instructions:

  1. In a large mixing bowl, gently mix the lean ground beef, panko, beaten egg, garlic powder, salt, and pepper.
  2. Roll the mixture into small, 1-inch spheres, avoiding overworking the meat to ensure they remain tender.
  3. Cook the meatballs using one of two methods: either bake on a parchment-lined sheet at 400°F (200°C) for 12-15 minutes, or brown in a skillet over medium-high heat until a mahogany crust forms on all sides.
  4. In a medium saucepan, combine bourbon, brown sugar, apple cider vinegar, soy sauce, Dijon mustard, and smoked paprika.
  5. Bring the glaze mixture to a gentle boil, then reduce heat to a simmer and cook for 5-7 minutes until the sauce thickens into a glossy syrup.
  6. Toss the cooked meatballs in the bourbon glaze until evenly coated.
