Ingredients:

  • 1 box (15.25 oz / 432g) white cake mix
  • 3 large eggs
  • 1/3 cup (80ml) unsweetened applesauce
  • 1 cup (240ml) cold water
  • 1 pkg (3 oz / 85g) flavored gelatin
  • 1 cup (240ml) boiling water
  • 8 oz (225g) light whipped topping
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and thoroughly grease a 9x13 inch baking pan.
  2. In a large bowl, combine the cake mix, eggs, applesauce, and cold water. Beat on low speed until moistened, then increase to medium speed for 2 minutes.
  3. Pour the batter into the prepared pan and bake for 25–27 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool for 5–10 minutes; it should remain warm to the touch.
  5. Stir the flavored gelatin into 1 cup of boiling water until completely dissolved.
  6. Using a wooden skewer, poke holes across the entire surface of the warm cake, spacing them approximately 1 inch apart.
  7. Slowly pour the liquid gelatin over the cake, ensuring it fills the holes.
  8. Place the pan in the refrigerator for at least 4 hours, or overnight, to allow the gelatin to set.
  9. Fold the vanilla extract into the light whipped topping and spread the mixture evenly over the chilled cake using a spatula.
  10. Return to the refrigerator until ready to serve.
