Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) coconut sugar
- 1/2 cup (120g) pumpkin puree
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 3/4 cups (210g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 2 tsp (10g) pumpkin pie spice
- 1/2 tsp (3g) sea salt
- 2 tbsp (25g) coconut sugar
- 1 tsp (5g) cinnamon
- 1/2 tsp (2g) pumpkin pie spice
Instructions:
- Spread the pumpkin puree on a layer of paper towels and press firmly with another towel to remove excess water.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat the softened butter and 100g of coconut sugar until the mixture is smooth and pale.
- Add the blotted pumpkin, egg, and vanilla extract. Mix on medium speed until the batter is velvety and fully combined.
- In a separate bowl, whisk together the whole wheat pastry flour, baking soda, 10g of pumpkin pie spice, and salt.
- Gradually stir the dry ingredients into the wet batter, mixing only until no streaks of flour remain.
- In a small bowl, combine 25g coconut sugar, cinnamon, and 2g pumpkin pie spice for the coating.
- Scoop 1.5 tablespoons of dough, roll into a ball, and roll through the spiced coating until evenly covered.
- Space cookies 2 inches apart on the baking sheet and bake for 10 minutes until edges are set but centers look slightly underbaked.
