Ingredients:

  • 3 large over-ripe bananas, mashed
  • 1/3 cup maple syrup
  • 1/3 cup plain Greek yogurt
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups white whole wheat flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup dark chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on the sides. Mash the bananas in a bowl until smooth with very few lumps.
  2. In a large bowl, whisk together the mashed bananas, maple syrup, Greek yogurt, egg, and vanilla until emulsified.
  3. In a separate medium bowl, sift together the white whole wheat flour, cocoa powder, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet base using a spatula; stop as soon as no more streaks of flour are visible to avoid over-mixing.
  5. Gently fold in the dark chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 55–65 minutes, or until the edges pull away from the pan and a toothpick inserted in the center comes out with a few moist crumbs.
