Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 2 tsp (10ml) vanilla extract
- 2 tbsp (30ml) Kentucky bourbon
- 1 cup (125g) all-purpose flour
- 1/2 tsp (3g) salt
- 1 cup (170g) semisweet chocolate chips
- 1 1/2 cups (150g) chopped pecans, toasted
Instructions:
- Preheat oven to 325°F (163°C) and line a 9x9 inch or 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Toast the chopped pecans in a small skillet over medium heat for 3-5 minutes until golden brown and fragrant. Set aside to cool.
- In a large bowl, whisk together the melted butter and granulated sugar until combined.
- Whisk in the eggs, vanilla extract, and bourbon until the mixture is smooth and glossy.
- Gently fold in the flour and salt using a spatula just until no white streaks remain, ensuring not to overmix.
- Fold in the semisweet chocolate chips and toasted pecans until evenly distributed.
- Spread the batter into the prepared pan and smooth the top. Bake for 45-50 minutes until edges are firm and a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the bars to cool completely in the pan before slicing.
