Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 2 tsp (10ml) vanilla extract
  • 2 tbsp (30ml) Kentucky bourbon
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semisweet chocolate chips
  • 1 1/2 cups (150g) chopped pecans, toasted

Instructions:

  1. Preheat oven to 325°F (163°C) and line a 9x9 inch or 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Toast the chopped pecans in a small skillet over medium heat for 3-5 minutes until golden brown and fragrant. Set aside to cool.
  3. In a large bowl, whisk together the melted butter and granulated sugar until combined.
  4. Whisk in the eggs, vanilla extract, and bourbon until the mixture is smooth and glossy.
  5. Gently fold in the flour and salt using a spatula just until no white streaks remain, ensuring not to overmix.
  6. Fold in the semisweet chocolate chips and toasted pecans until evenly distributed.
  7. Spread the batter into the prepared pan and smooth the top. Bake for 45-50 minutes until edges are firm and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Allow the bars to cool completely in the pan before slicing.
