Ingredients:
- 4 (6 oz / 170 g) white fish fillets (Cod, Halibut, or Tilapia)
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 g) garlic powder
- 1 tsp (5 g) smoked paprika
- 1/2 tsp (3 g) sea salt
- 1/4 tsp (1 g) cracked black pepper
- 1/2 tsp (3 g) dried oregano
Instructions:
- Preheat the oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or place a wire cooling rack on top of the sheet for maximum airflow.
- Pat the fish fillets completely dry on all sides using paper towels to ensure a crispy exterior.
- In a small mixing bowl, whisk together the garlic powder, smoked paprika, sea salt, cracked black pepper, and dried oregano.
- Brush each fillet with olive oil, then evenly coat both sides with the seasoning blend, pressing the spices firmly into the flesh.
- Place the fillets on the prepared rack or sheet and bake for 12–15 minutes until the edges are deep gold and the flesh is opaque.
- Remove from the oven and let the fish rest for 3–5 minutes to allow internal juices to redistribute.
