Ingredients:

  • 4 (6 oz / 170 g) white fish fillets (Cod, Halibut, or Tilapia)
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 g) garlic powder
  • 1 tsp (5 g) smoked paprika
  • 1/2 tsp (3 g) sea salt
  • 1/4 tsp (1 g) cracked black pepper
  • 1/2 tsp (3 g) dried oregano

Instructions:

  1. Preheat the oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or place a wire cooling rack on top of the sheet for maximum airflow.
  2. Pat the fish fillets completely dry on all sides using paper towels to ensure a crispy exterior.
  3. In a small mixing bowl, whisk together the garlic powder, smoked paprika, sea salt, cracked black pepper, and dried oregano.
  4. Brush each fillet with olive oil, then evenly coat both sides with the seasoning blend, pressing the spices firmly into the flesh.
  5. Place the fillets on the prepared rack or sheet and bake for 12–15 minutes until the edges are deep gold and the flesh is opaque.
  6. Remove from the oven and let the fish rest for 3–5 minutes to allow internal juices to redistribute.
