Ingredients:

  • 2.5 cups all-purpose flour
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 cups granulated sugar
  • 0.5 cup unsalted butter, softened
  • 0.25 cup vegetable oil
  • 3 large eggs, room temperature
  • 1 cup whole milk
  • 1 tbsp pure vanilla extract

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a 9x13 inch baking pan thoroughly with butter or non-stick spray and line the bottom with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Sift the flour if it appears clumpy to ensure even distribution.
  3. Beat the softened butter, vegetable oil, and granulated sugar together using an electric mixer until the mixture is pale and fluffy, approximately 2-3 minutes.
  4. Add the room temperature eggs one at a time, beating well after each addition to maintain the emulsion.
  5. Stir in the pure vanilla extract and whole milk until the batter is smooth and glossy.
  6. Turn the mixer to the lowest setting and slowly add the dry ingredients to the wet blend. Mix only until the white streaks of flour disappear to avoid over-mixing.
  7. Pour the batter into the prepared baking pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
