Ingredients:
- 2.5 cups all-purpose flour
- 2.5 tsp baking powder
- 0.5 tsp salt
- 1.5 cups granulated sugar
- 0.5 cup unsalted butter, softened
- 0.25 cup vegetable oil
- 3 large eggs, room temperature
- 1 cup whole milk
- 1 tbsp pure vanilla extract
Instructions:
- Preheat your oven to 325°F (165°C). Grease a 9x13 inch baking pan thoroughly with butter or non-stick spray and line the bottom with parchment paper.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt. Sift the flour if it appears clumpy to ensure even distribution.
- Beat the softened butter, vegetable oil, and granulated sugar together using an electric mixer until the mixture is pale and fluffy, approximately 2-3 minutes.
- Add the room temperature eggs one at a time, beating well after each addition to maintain the emulsion.
- Stir in the pure vanilla extract and whole milk until the batter is smooth and glossy.
- Turn the mixer to the lowest setting and slowly add the dry ingredients to the wet blend. Mix only until the white streaks of flour disappear to avoid over-mixing.
- Pour the batter into the prepared baking pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
