Ingredients:
- 1 lb firm white fish fillets
- 2 tbsp avocado oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp melted unsalted butter
- 1 tbsp fresh lemon juice
- 1 tbsp finely chopped fresh parsley
- 1 lemon, sliced into rounds
Instructions:
- Pat the fillets completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the avocado oil, salt, pepper, garlic powder, and paprika. Brush the mixture generously over all sides of the fillets.
- Preheat the grill to medium-high heat (approx. 400°F/200°C). Oil the grates lightly using a paper towel dipped in oil to prevent sticking.
- Carefully place the fillets on the hot grates. Close the lid and sear for 3–5 minutes without moving them.
- Using a fish spatula, gently flip the fillets once they release naturally from the grill.
- Grill for another 3–4 minutes. Simultaneously, place the lemon slices on the grill for 2 minutes per side until slightly charred.
- Remove fish from the heat. Immediately brush the melted butter and lemon juice mixture over the hot fillets.
- Sprinkle with fresh parsley and serve topped with the grilled lemon rounds.
