Ingredients:

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1.5 lb white fish fillets (Tilapia, Cod, or Mahi Mahi)

Instructions:

  1. Whisk together the olive oil, lemon juice, minced garlic, paprika, salt, and pepper in a bowl.
  2. Pat the fish fillets completely dry with paper towels and coat them thoroughly with the marinade. Let them sit for 5 minutes while the grill heats.
  3. Preheat grill to high heat (400°F-450°F) and lightly oil the grates to prevent sticking.
  4. Place the fillets on the grill and cook undisturbed for 3–4 minutes until a crust forms.
  5. Flip the fillets gently using a fish spatula and cook for another 3–4 minutes until the flesh is opaque and the internal temperature reaches 145°F.
