Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1 tsp (6g) salt
- 1 tsp (4g) granulated sugar
- 1/2 cup (113g) cold unsalted butter
- 3/4 cup (180ml) cold whole milk
Instructions:
- Whisk together the all-purpose flour, baking powder, salt, and sugar in a large bowl. Ensure there are no large clumps to guarantee an even rise across all biscuits.
- Add the cold cubed butter. Use a pastry cutter or fork to work the fat into the flour until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
- Pour in the cold milk. Stir with a spoon just until the dough comes together. Stop the moment the flour is moistened; the dough should look slightly shaggy.
- Place dough on a floured surface and pat it to 1-inch thickness. Cut into rounds and place them on a parchment-lined sheet, touching each other.
- Bake at 425°F (218°C) for 12-15 minutes until the tops are mahogany-colored and the edges are crisp.
