Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1 cup (225g) unsalted butter, chilled and cubed
- 1 tsp (6g) granulated sugar
- 1 tsp (6g) salt
- 8 tbsp (120ml) ice-cold water
- 3 lbs (1.35kg) Granny Smith apples, peeled and sliced 1/4 inch thick
- 0.75 cup (150g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tbsp (6g) ground cinnamon
- 0.25 tsp (1g) ground nutmeg
- 0.125 tsp (0.5g) ground cloves
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) lemon zest
- 1 large egg, beaten
- 1 tbsp (12g) coarse sanding sugar
Instructions:
- Cut the chilled butter into the flour, sugar, and salt using a pastry cutter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, stirring until the dough just holds together.
- Divide dough into two discs, wrap in plastic, and place in the freezer for 15-20 minutes to quick-chill.
- Toss the sliced Granny Smith apples with lemon juice and zest to prevent oxidation.
- In a large bowl, whisk together sugar, cornstarch, cinnamon, nutmeg, and cloves.
- Fold in the apples until evenly coated and let sit for 10 minutes until the juices begin to pool.
- Roll out the first disc to a 12-inch circle and press it into a 9-inch deep-dish pie plate.
- Pour in the filling, mounding it slightly in the center.
- Roll out the second disc and cut into 1 inch strips to weave a lattice top.
- Brush the top with the beaten egg and sprinkle with sanding sugar.
- Bake at 350°F (180°C) for 50 minutes until the crust is mahogany.
