Ingredients:
- 2 (6 oz) firm white fish fillets (Mahi Mahi, Halibut, or Cod)
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/4 tsp garlic powder
- 3 tbsp unsalted butter
- 2 tbsp fresh lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 pinch salt
Instructions:
- Pat the fish fillets bone-dry with paper towels. Rub both sides with olive oil, then season evenly with salt, pepper, and garlic powder. Let them sit at room temperature for 5 minutes.
- Preheat your grill or grill pan to medium-high heat. Place the fillets carefully on the grate and grill for 3–5 minutes per side until a mahogany-colored crust forms and the fish feels firm but springy.
- While the fish rests, melt the butter in a small saucepan over medium-low heat. Add the minced garlic and sauté for 30 seconds until fragrant.
- Stir in the lemon juice and salt, whisking constantly for 1 minute until the sauce is glossy and thickened. Remove from heat and stir in the chopped fresh parsley.
