Ingredients:
- 2 cups (240g) oat flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tsp (10g) ground cinnamon
- ¼ tsp (1g) ground nutmeg
- ½ cup (120g) plain Greek yogurt
- ½ cup (120g) unsweetened applesauce
- ⅓ cup (80ml) pure maple syrup
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (225g) peeled and finely diced apples
- ¼ cup (30g) chopped walnuts or pecans
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, whisk together oat flour, baking soda, salt, cinnamon, and nutmeg until no clumps remain.
- In a separate bowl, whisk together plain Greek yogurt, unsweetened applesauce, maple syrup, eggs, and vanilla extract until the mixture is smooth.
- Pour the wet ingredients into the dry mixture and stir gently with a silicone spatula until just combined; do not overmix.
- Fold in the diced apples and chopped nuts, ensuring they are evenly distributed throughout the batter.
- Transfer batter to the prepared pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
