Ingredients:
- 1.5 cups (180g) oat flour
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 1 tbsp (8g) ground cinnamon
- 0.25 tsp (1.5g) fine sea salt
- 0.5 cup (120g) plain Greek yogurt
- 2 large eggs
- 0.33 cup (65g) maple syrup
- 1 tsp (5ml) pure vanilla extract
- 2 tbsp (30ml) unsweetened almond milk
- 2 cups (300g) fresh apples, peeled and diced
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the oat flour, baking powder, baking soda, 1 tablespoon of cinnamon, and salt.
- In a separate bowl, beat the eggs, Greek yogurt, maple syrup, vanilla, and almond milk until the mixture is smooth and aerated.
- Fold the wet ingredients into the dry flour mixture until just combined, ensuring not to overmix.
- Toss the diced apples with 1 teaspoon of cinnamon, then gently fold them into the batter using a spatula until evenly distributed.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until the top is mahogany-colored and a toothpick inserted into the center comes out clean.
