- 6 cups (900g) Granny Smith apples, peeled, cored, and diced
- 1/2 cup (100g) brown sugar, packed
- 1 tbsp (8g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, softened
- 2 large eggs, room temperature
- 1 cup (240ml) whole milk, room temperature
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Toss the diced apples with brown sugar, cinnamon, and lemon juice in a medium bowl. Let the mixture sit for 10 minutes to form a syrupy glaze.
- Cream the softened butter and granulated sugar until the mixture is pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the whole milk, mixing until just combined.
- Pour the batter into a prepared 9x13 inch baking pan and smooth the top with a spatula.
- Evenly distribute the cinnamon-apple mixture over the batter, pressing the fruit lightly into the surface.
- Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
