Ingredients:

  • 1 cup (225g) unsalted butter, melted and warm
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup (100g) Dutch-process cocoa powder, sifted
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon sea salt
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides. In a large bowl, combine the warm melted butter and sugar. Whisk vigorously for about 30 seconds until the mixture looks like wet sand.
  2. Add the eggs one at a time, whisking thoroughly after each addition. Once all eggs are incorporated, add the vanilla extract and whisk for another full minute until the batter looks glossy and slightly pale.
  3. Sift the cocoa powder, flour, and salt directly into the wet ingredients. Use a silicone spatula to gently fold the mixture until just combined and no white streaks remain. Fold in the chocolate chips if using.
  4. Pour the batter into the prepared pan and smooth the top. Bake for 25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
