Ingredients:
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh thyme leaves
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1.25 lb firm white fish fillets
- 1 tbsp olive oil
Instructions:
- Whisk together the olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper in a small bowl.
- Pat the fish fillets completely dry with paper towels and brush the marinade generously over both sides of the fillets.
- Let the fish marinate for 10–15 minutes.
- Preheat the grill to medium-high heat and brush the grates with olive oil.
- Place fillets on the grill and sear undisturbed for 4–5 minutes per side until a golden-brown crust forms.
- Remove fish from heat when internal temperature reaches 135°F (halibut) or 140°F (cod) and let rest for 3 minutes before serving.
