Ingredients:

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1.25 lb firm white fish fillets
  • 1 tbsp olive oil

Instructions:

  1. Whisk together the olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper in a small bowl.
  2. Pat the fish fillets completely dry with paper towels and brush the marinade generously over both sides of the fillets.
  3. Let the fish marinate for 10–15 minutes.
  4. Preheat the grill to medium-high heat and brush the grates with olive oil.
  5. Place fillets on the grill and sear undisturbed for 4–5 minutes per side until a golden-brown crust forms.
  6. Remove fish from heat when internal temperature reaches 135°F (halibut) or 140°F (cod) and let rest for 3 minutes before serving.
