Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breast, cubed
- 2 tbsp (30ml) olive oil
- 3 cloves (9g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) dried oregano
- ½ tsp (3g) sea salt
- ¼ tsp (1g) black pepper
- 1 cup (170g) dry quinoa, rinsed
- 2 cups (480ml) water or low-sodium vegetable broth
- 2 cups (300g) Persian cucumbers, diced
- 1 pint (250g) cherry tomatoes, halved
- ½ cup (75g) red onion, finely diced
- ½ cup (75g) Kalamata olives, pitted and sliced
- ½ cup (75g) crumbled feta cheese
- ½ cup (120g) plain non-fat Greek yogurt
- 1 tbsp (15ml) lemon juice
- 1 tbsp (15ml) fresh dill, finely chopped
- 1 clove (3g) garlic, grated
- 1 pinch (1g) salt
Instructions:
- Combine quinoa and water or low sodium vegetable broth in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and grains look fluffy.
- Remove the pot from heat and let the quinoa sit covered for 5 minutes Note: This allows the remaining steam to finish the cooking process..
- In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Toss the cubed chicken in the marinade to coat evenly.
- Heat a skillet over medium high heat. Add chicken in a single layer and cook for 6-8 minutes, stirring occasionally, until edges are golden brown and the center is no longer pink.
- In a small bowl, whisk together the non fat Greek yogurt, lemon juice, chopped dill, grated garlic, and salt until smooth.
- Divide the cooked quinoa into four meal prep containers.
- Top each Mediterranean Protein Bowl with the cooked chicken, diced cucumbers, cherry tomatoes, red onion, Kalamata olives, and crumbled feta.
- Drizzle the zesty yogurt sauce over each bowl or store it in separate small containers for freshness.
