Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breast, cubed
  • 2 tbsp (30ml) olive oil
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) dried oregano
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) black pepper
  • 1 cup (170g) dry quinoa, rinsed
  • 2 cups (480ml) water or low-sodium vegetable broth
  • 2 cups (300g) Persian cucumbers, diced
  • 1 pint (250g) cherry tomatoes, halved
  • ½ cup (75g) red onion, finely diced
  • ½ cup (75g) Kalamata olives, pitted and sliced
  • ½ cup (75g) crumbled feta cheese
  • ½ cup (120g) plain non-fat Greek yogurt
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (15ml) fresh dill, finely chopped
  • 1 clove (3g) garlic, grated
  • 1 pinch (1g) salt

Instructions:

  1. Combine quinoa and water or low sodium vegetable broth in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and grains look fluffy.
  2. Remove the pot from heat and let the quinoa sit covered for 5 minutes Note: This allows the remaining steam to finish the cooking process..
  3. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Toss the cubed chicken in the marinade to coat evenly.
  4. Heat a skillet over medium high heat. Add chicken in a single layer and cook for 6-8 minutes, stirring occasionally, until edges are golden brown and the center is no longer pink.
  5. In a small bowl, whisk together the non fat Greek yogurt, lemon juice, chopped dill, grated garlic, and salt until smooth.
  6. Divide the cooked quinoa into four meal prep containers.
  7. Top each Mediterranean Protein Bowl with the cooked chicken, diced cucumbers, cherry tomatoes, red onion, Kalamata olives, and crumbled feta.
  8. Drizzle the zesty yogurt sauce over each bowl or store it in separate small containers for freshness.
