- 1/3 cup (80ml) extra virgin olive oil
- 3 tbsp (45ml) fresh lemon juice
- 2 tbsp (42g) honey
- 1 tbsp (15g) Dijon mustard
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Cut the broccoli into very small, uniform florets, approximately the size of a blueberry, to ensure an even distribution of flavors.
- Dice the apples into matching cubes and finely mince the red onion.
- In a small jar or bowl, combine the olive oil, lemon juice, honey, mustard, salt, and pepper.
- Whisk vigorously or shake the dressing until the mixture transforms into a smooth, opaque gold liquid.
- Combine the broccoli, apples, blueberries, cranberries, sunflower seeds, and red onion in a large mixing bowl.
- Pour the dressing over the salad ingredients and toss gently until every floret is glistening and blueberries are evenly dispersed.
