Ingredients:
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 lb white fish fillets (such as Branzino, Red Snapper, or Halibut)
- 1 lemon, sliced into rounds
- 1 tbsp extra virgin olive oil
Instructions:
- Pat the fish fillets completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together 3 tbsp olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Brush the marinade generously over all sides of the fish and let sit at room temperature for 10–15 minutes.
- Preheat the outdoor grill or cast-iron grill pan to medium-high heat.
- Apply 1 tbsp of olive oil directly to the grill grates using a pastry brush to prevent sticking.
- Carefully place the fish and lemon rounds on the grill, searing until the fish is flaky and has a mahogany-gold crust, approximately 4 minutes per side.
