Ingredients:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 lb white fish fillets (such as Branzino, Red Snapper, or Halibut)
  • 1 lemon, sliced into rounds
  • 1 tbsp extra virgin olive oil

Instructions:

  1. Pat the fish fillets completely dry with paper towels to ensure a proper sear.
  2. In a small bowl, whisk together 3 tbsp olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  3. Brush the marinade generously over all sides of the fish and let sit at room temperature for 10–15 minutes.
  4. Preheat the outdoor grill or cast-iron grill pan to medium-high heat.
  5. Apply 1 tbsp of olive oil directly to the grill grates using a pastry brush to prevent sticking.
  6. Carefully place the fish and lemon rounds on the grill, searing until the fish is flaky and has a mahogany-gold crust, approximately 4 minutes per side.
