Ingredients:
- 1 tbsp light butter, softened
- 1 tbsp plain Greek yogurt (0% or 2%)
- 1/2 tsp garlic powder
- 1 tsp grated Parmesan cheese
- 1/2 tsp dried oregano
- 2 slices sourdough bread (1/2 inch thick)
- 1/2 cup part-skim shredded mozzarella cheese
- 10 slices turkey pepperoni
- 4 fresh basil leaves, torn
- 1 tbsp red onion, shaved paper-thin
- 1/4 cup low-sugar marinara sauce, warmed
Instructions:
- In a small bowl, whisk together the softened light butter, Greek yogurt, garlic powder, Parmesan, and oregano until it forms a thick paste.
- Lay sourdough slices flat and spread the yogurt-butter mixture evenly from edge to edge on one side of each slice. These will be the outside of the sandwich.
- Flip the bread over so the dry side is facing up. Layer half of the mozzarella on one slice.
- Top the mozzarella with turkey pepperoni, torn basil, and shaved red onions.
- Add the remaining mozzarella over the fillings and top with the second slice of bread, ensuring the buttered side is facing outward.
- Heat a non-stick skillet over medium-low heat. Place the sandwich in the pan and cook for 3-4 minutes per side until the crust is mahogany-colored and the cheese is melted.
- Serve immediately with a side of warm low-sugar marinara sauce for dipping.
