Ingredients:

  • 1 tbsp light butter, softened
  • 1 tbsp plain Greek yogurt (0% or 2%)
  • 1/2 tsp garlic powder
  • 1 tsp grated Parmesan cheese
  • 1/2 tsp dried oregano
  • 2 slices sourdough bread (1/2 inch thick)
  • 1/2 cup part-skim shredded mozzarella cheese
  • 10 slices turkey pepperoni
  • 4 fresh basil leaves, torn
  • 1 tbsp red onion, shaved paper-thin
  • 1/4 cup low-sugar marinara sauce, warmed

Instructions:

  1. In a small bowl, whisk together the softened light butter, Greek yogurt, garlic powder, Parmesan, and oregano until it forms a thick paste.
  2. Lay sourdough slices flat and spread the yogurt-butter mixture evenly from edge to edge on one side of each slice. These will be the outside of the sandwich.
  3. Flip the bread over so the dry side is facing up. Layer half of the mozzarella on one slice.
  4. Top the mozzarella with turkey pepperoni, torn basil, and shaved red onions.
  5. Add the remaining mozzarella over the fillings and top with the second slice of bread, ensuring the buttered side is facing outward.
  6. Heat a non-stick skillet over medium-low heat. Place the sandwich in the pan and cook for 3-4 minutes per side until the crust is mahogany-colored and the cheese is melted.
  7. Serve immediately with a side of warm low-sugar marinara sauce for dipping.
