Ingredients:

  • 1.5 lbs chicken breast, diced into 1/2-inch cubes
  • 1 tbsp avocado oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp sea salt
  • 3 cups cooked brown rice
  • 15 oz canned black beans, rinsed and drained
  • 2 cups shredded Romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, sliced
  • 0.25 cup red onion, finely diced
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup shredded sharp cheddar cheese
  • 0.5 cup Greek yogurt
  • 1 tbsp lime juice, freshly squeezed
  • 0.5 tsp hot sauce

Instructions:

  1. Heat avocado oil in a large skillet over medium-high heat. Toss the diced chicken with the chili powder, cumin, smoked paprika, garlic powder, and sea salt. Add the chicken to the pan and cook for 8-10 minutes until the edges are golden and the center is opaque.
  2. Lightly warm the pre-cooked brown rice and drained black beans in a separate pan or microwave.
  3. In a small bowl, whisk together Greek yogurt, lime juice, and hot sauce to create the lime crema.
  4. Assemble the bowls by layering rice, beans, seasoned chicken, romaine lettuce, tomatoes, onion, and avocado.
  5. Garnish with shredded cheese, fresh cilantro, and a drizzle of the lime crema.
