Ingredients:
- 1.5 lbs chicken breast, diced into 1/2-inch cubes
- 1 tbsp avocado oil
- 2 tsp chili powder
- 1 tsp cumin
- 0.5 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp sea salt
- 3 cups cooked brown rice
- 15 oz canned black beans, rinsed and drained
- 2 cups shredded Romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 large avocado, sliced
- 0.25 cup red onion, finely diced
- 0.25 cup fresh cilantro, chopped
- 0.5 cup shredded sharp cheddar cheese
- 0.5 cup Greek yogurt
- 1 tbsp lime juice, freshly squeezed
- 0.5 tsp hot sauce
Instructions:
- Heat avocado oil in a large skillet over medium-high heat. Toss the diced chicken with the chili powder, cumin, smoked paprika, garlic powder, and sea salt. Add the chicken to the pan and cook for 8-10 minutes until the edges are golden and the center is opaque.
- Lightly warm the pre-cooked brown rice and drained black beans in a separate pan or microwave.
- In a small bowl, whisk together Greek yogurt, lime juice, and hot sauce to create the lime crema.
- Assemble the bowls by layering rice, beans, seasoned chicken, romaine lettuce, tomatoes, onion, and avocado.
- Garnish with shredded cheese, fresh cilantro, and a drizzle of the lime crema.
