Ingredients:
- 6 cups (approx. 250g) Rice Chex cereal
- 4 cups (approx. 150g) Corn Chex cereal
- 4 cups (approx. 100g) Bugles or corn puffs
- 4 cups (approx. 120g) Small pretzels
- 2 cups (approx. 280g) Roasted salted peanuts
- 1 cup (225g) Unsalted butter
- 2 cups (400g) Light brown sugar, packed
- ½ cup (160ml) Light corn syrup
- 1 tsp (6g) Salt
- ½ tsp (3g) Baking soda
- 1 tsp (5ml) Vanilla extract
Instructions:
- Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
- In an extra large mixing bowl, combine the Rice Chex, Corn Chex, Bugles, pretzels, and peanuts, tossing gently to avoid crushing the cereal.
- In a saucepan over medium heat, combine the butter, brown sugar, corn syrup, and salt. Stir constantly until the butter is melted and the mixture begins to bubble, then bring to a gentle boil for exactly one minute. Note: It should smell like toasted marshmallows at this point.
- Remove the saucepan from heat and immediately stir in the baking soda and vanilla extract until the mixture foams. Note: The foam is what makes the coating light.
- Pour the foaming caramel over the dry cereal mixture and fold gently with a spatula until every piece is evenly coated.
- Spread the mixture in a thin, even layer on the prepared baking sheet.
- Bake for 15 minutes, stirring halfway through until the mix smells nutty and toasted.
- Remove from the oven and allow the mix to cool completely on the pan for at least 30 minutes to ensure a shattering crust.
