Ingredients:

  • 6 cups (approx. 250g) Rice Chex cereal
  • 4 cups (approx. 150g) Corn Chex cereal
  • 4 cups (approx. 100g) Bugles or corn puffs
  • 4 cups (approx. 120g) Small pretzels
  • 2 cups (approx. 280g) Roasted salted peanuts
  • 1 cup (225g) Unsalted butter
  • 2 cups (400g) Light brown sugar, packed
  • ½ cup (160ml) Light corn syrup
  • 1 tsp (6g) Salt
  • ½ tsp (3g) Baking soda
  • 1 tsp (5ml) Vanilla extract

Instructions:

  1. Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
  2. In an extra large mixing bowl, combine the Rice Chex, Corn Chex, Bugles, pretzels, and peanuts, tossing gently to avoid crushing the cereal.
  3. In a saucepan over medium heat, combine the butter, brown sugar, corn syrup, and salt. Stir constantly until the butter is melted and the mixture begins to bubble, then bring to a gentle boil for exactly one minute. Note: It should smell like toasted marshmallows at this point.
  4. Remove the saucepan from heat and immediately stir in the baking soda and vanilla extract until the mixture foams. Note: The foam is what makes the coating light.
  5. Pour the foaming caramel over the dry cereal mixture and fold gently with a spatula until every piece is evenly coated.
  6. Spread the mixture in a thin, even layer on the prepared baking sheet.
  7. Bake for 15 minutes, stirring halfway through until the mix smells nutty and toasted.
  8. Remove from the oven and allow the mix to cool completely on the pan for at least 30 minutes to ensure a shattering crust.
