Ingredients:

  • 1.5 lb fresh broccoli, cut into bite-sized florets
  • 3 cloves fresh garlic, thinly slivered
  • 1 medium carrot, peeled and julienned
  • 2 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter
  • 3 tbsp water
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper
  • 0.25 tsp red pepper flakes
  • 0.5 fresh lemon, juiced

Instructions:

  1. Place a 12-inch heavy-bottomed skillet over medium-high heat and add olive oil. Once shimmering, add broccoli florets and julienned carrots in a single layer. Let sit undisturbed for 2 minutes until the bottom edges develop a mahogany-colored char.
  2. Carefully pour 3 tablespoons of water into the pan and immediately cover with a tight-fitting lid. Reduce heat to medium and steam for 2 minutes to soften the stalks and lock in the green color.
  3. Remove the lid and push the broccoli to the sides of the pan. Place the butter and slivered garlic in the center. Once the butter is foamy and garlic is fragrant (approx. 60 seconds), toss all ingredients together.
  4. Season with sea salt, black pepper, red pepper flakes, and fresh lemon juice. Serve immediately while vibrant.
